Baked Pears with Parma Ham & Roquefort Filling
Ingredients
- 4 ripe pears
- 100g Roquefort
- 8 slices of Parma ham
- 3 tbsp. olive oil
- 2 tbsp. walnut oil
- 1 tbsp. honey
- 2 tbsp. balsamic vinegar
- Sea salt, freshly ground black pepper
Preparation
- Preheat the oven to 180 °C. Wash pears. Use a melon baller to remove the cores from the bottom up. Press the cheese inside the hollowed-out pears. Wrap each pear with two slices of Parma ham and place them into a mini cocotte. Set the cocottes onto a baking tray. Bake for around 15 minutes.
- Meanwhile, whisk the two types of oil together with the honey, salt, and balsamic vinegar. Remove the pears from the oven; drizzle with dressing and season with freshly ground pepper and salt.
- Serve with a green salad.

Peach & Passion Fruit Jam
Ingredients
For about 8 x 250ml or 1 cup canning jars:
- 1kg peaches
- 4 passion fruits
- 500g jam sugar
- Caviar of 1 vanilla bean
Preparation
- Wash peaches; cut in half and remove pits. Dice small.
- Cut passion fruits in half; scrape out the pulp with a spoon. Mix pulp (including seeds), jam sugar, vanilla caviar, and cubed peaches in a cocotte.
- Bring to a boil, stirring occasionally. Simmer for around 4 to 5 minutes.
- While the jam is still hot, pour it into sterilized jars. Seal the jars. For best results, store in the refrigerator.

Pear Clafoutis with Almonds
Ingredients
- 600g ripe pears
- Zest and juice of 1 lemon
- Butter and flour for the dish
- 4 eggs
- 120g flour
- 50g liquid butter
- 2 tbsp. pear brandy
- 50ml milk
- 100g sugar
- 50g flaked almonds
- Cinnamon for garnishing
Preparation
- Wash, halve, and core the pears. Cut the halves into fine slivers and sprinkle with lemon juice. Grease an oval ceramic mould and dust with flour.
- Preheat the baking oven to 200 °C. Separate the eggs. Mix the egg yolk with flour and lemon zest in a mixing bowl. Pour in the melted butter and pear brandy as well as the tepid milk and mix together thoroughly. Beat the egg whites until stiff. While doing so, gradually trickle the sugar in. Fold the beaten egg whites into the batter.
- Pour the batter into the mould and spread the pear slices evenly across it. Sprinkle the whole mixture with almonds and allow to bake for about 30 minutes in a hot oven. Remove from the oven and dust with cinnamon.
